Itabo (Yucca Flower) Salad
Eating Itabo flowers are traditional at Easter in Costa Rica,but they’re late this year.
Most Ticos mix them with eggs, but Rosie showed me how to make a delicious salad.
Simply par-boil the blossoms and add a favorite vinaigrette.

Interesting! Couldn’t a plant with a tuber also have a flower?
Trying to get to the bottom of this. This from Wikipedia: “Yuccas are widely grown as ornamental plants in gardens. Many species also bear edible parts, including fruits, seeds, flowers, flowering stems,[8] and more rarely roots. References to yucca root as food often stem from confusion with the similarly pronounced, but botanically unrelated, yuca, also called cassava (Manihot esculenta).
I honestly thought they were the same plant with two different uses. But I was wrong.
